  • 1 yellow onion chopped
  • 1 package of boneless pork, cubed
  • Garlic
  • 2 Boxes of chicken broth
  • 1 jar of Herdez (or La Victoria) green salsa
  • 1 large can of hominy
  • 1 bunch of cilantro, diced
  • 2 small cans of diced hatch green chilis
  • 3 Tbs Olive Oil

Heat oil in a pot, add the pork and cook until the outsides of the meat are cooked. Add onions, garlic and s & p and saute until the onions are almost translucent. Add the broth and the green salsa. Add the hominy and the green chili’s. Bring to a boil for 10 minutes. Turn off heat and stir in cilantro, salt and pepper to taste.
